Introduction
High Maltose Corn Syrup Powder is the dry counterpart to liquid high-maltose corn syrup, a key sweetener and functional carbohydrate in modern food manufacturing. The maltose-rich sugar profile (rather than dextrose-dominant) yields lower sweetness, lower hygroscopicity, and better fermentation behavior than equivalent-DE glucose syrup.
Production starts from corn starch. Alpha-amylase and beta-amylase hydrolysis is controlled to favor maltose formation. The resulting syrup is refined through carbon decolorization, ion exchange, and evaporation, then spray-dried with or without a small fraction of low-DE maltodextrin as a carrier to produce free-flowing powder.
Regulated as a starch hydrolysate in all major jurisdictions and listed as Generally Recognized as Safe by the U.S. FDA.
The powder form is particularly valuable in dry-blend bakery, beverage, and confectionery applications where liquid syrup handling is impractical. The high-maltose sugar profile supports brewing applications that demand clean fermentation and reproducible results.
