Introduction
Powdered sugar with anti-caking starch is a centuries-old confectionery format that became standardized in industrial form during the late nineteenth century, when steam-driven milling allowed consistent fine particles and starch addition became routine.
Production is by milling refined granulated sucrose in a hammer or pin mill to the target fineness, followed by blending of food-grade cornstarch (or tapioca or rice starch for gluten-free grades). The starch absorbs residual moisture and physically separates sugar particles to prevent clumping.
Regulated as a sugar product in all major jurisdictions, with the starch addition declared on labels. Both sucrose and cornstarch are GRAS in the United States and approved food ingredients in the EU and other markets.
The 6X and 10X grading is a U.S. industry convention reflecting mill passes and final fineness, with 10X being the finest commercial grade and the preferred format for royal icing, fondant, and other decoration work where lump-free smoothness is essential.
