Introduction
The Saccharomyces cerevisiae cell wall has two functionally distinct components: an inner beta-1,3-glucan matrix with beta-1,6 branches, and an outer mannoprotein layer rich in mannose-bound proteins. Beta-glucan activates Dectin-1 receptors on macrophages and neutrophils, priming the innate immune response. Mannoproteins bind Gram-negative pathogens through their Type 1 fimbriae and remove them from the gut.
Whole yeast cell wall products deliver both functions in a single ingredient, which is the principal commercial argument over isolated MOS or isolated beta-glucan. Composition varies by strain, growth medium, and processing method, so reputable suppliers report both beta-glucan and mannan content on each batch COA.
The product is produced as a co-product of yeast extract manufacturing (the soluble fraction is sold to the food flavoring industry) or as a primary product from dedicated fermentation. Brewer's yeast cell wall and baker's yeast cell wall have similar but not identical profiles.
