The sodium salt of Propionic Acid, providing the same selective antimycotic function as Calcium Propionate without the calcium contribution. Used wherever the calcium load of Calcium Propionate would be undesirable.

Introduction
Sodium Propionate is functionally equivalent to Calcium Propionate as a selective antimycotic preservative, with the difference being the sodium counter-ion replacing calcium.
Industrial production proceeds by neutralization of Propionic Acid with sodium hydroxide or sodium carbonate, followed by crystallization. The calcium and sodium salts share the same source feedstock (Propionic Acid) and the same antimicrobial mechanism.
Regulated as E281 in the EU, classified as Generally Recognized as Safe by the U.S. FDA, and approved by JECFA without a numerical Acceptable Daily Intake limit.
The molecule's antimicrobial mechanism is identical to Calcium Propionate: Propionate inhibits molds and rope-forming bacteria but does not inhibit Saccharomyces cerevisiae, allowing use in yeast-leavened bakery products.
The choice between Calcium and Sodium Propionate is application-driven rather than functional: Calcium is preferred in bread for the calcium-fortification labeling advantage, while Sodium serves applications where calcium would interfere with formulation chemistry, such as some pharmaceutical preparations and specialty industrial applications.
