01 — Overview

Description

A standardized synergistic blend of Sodium Lactate and Sodium Diacetate, formulated as the dominant Listeria monocytogenes control system in ready-to-eat refrigerated meat and poultry. The combination delivers stronger and more durable Listeria suppression than either ingredient alone at lower combined use levels.

White to off-white powder or clear liquid (depending on grade), with characteristic acetic acid note. Highly water-soluble. Standard blend ratios target the 60 to 80 percent lactate plus 1 to 2 percent diacetate range based on customer specification.

02 — Background

Introduction

Sodium Lactate and Sodium Diacetate blends emerged as the industry-standard Listeria-control system in the early 2000s after Listeria monocytogenes outbreaks in ready-to-eat refrigerated meat drove regulatory and customer pressure for a non-thermal post-lethality intervention.

The mechanism is synergistic. Sodium Lactate suppresses bacterial water activity and slows growth across all organisms, while Sodium Diacetate provides direct weak-acid antimicrobial activity specifically against Listeria. The combination delivers durable Listeria suppression at use levels (typically 1.5 to 3 percent lactate plus 0.1 percent diacetate in finished product) lower than either ingredient alone would require for equivalent effect.

Regulated as E325 (Sodium Lactate) and E262 (Sodium Diacetate) in the EU. Both ingredients are classified as Generally Recognized as Safe by the U.S. FDA, with the blend approved as a USDA Listeria post-lethality treatment under 9 CFR 430. JECFA Acceptable Daily Intake is not specified for lactate (no limit) and not specified for acetate (no limit).

Industrial production proceeds by standardized blending of Sodium Lactate (produced by neutralization of lactic acid with sodium hydroxide, typically supplied as 60 percent aqueous solution) with Sodium Diacetate powder, followed by spray-drying or solution-stage standardization.

Strategic positioning is dominant: this blend is the de facto USDA-acceptable Listeria-control treatment for refrigerated ready-to-eat meat in the United States, and equivalent systems are used in EU and Asian meat processing. The blend has displaced sodium benzoate and potassium sorbate alternatives in this segment because parabens and sorbates do not meet USDA post-lethality treatment requirements.
