02 — Background

Introduction

The Styrian region of southeastern Austria and adjacent Slovenia developed the hull-less pumpkin (Cucurbita pepo var. styriaca) through selective breeding in the 19th century. The hull-less seed greatly simplifies cold-pressing and yields the characteristic dark green oil now protected by EU PGI designation.

The oil's traditional culinary use in Styrian and Slovenian cuisine is paralleled by a substantial nutraceutical market: phytosterol and zinc content support traditional and contemporary use for prostate health, urinary symptoms, and men's wellness positioning.

The distinctive color comes from chlorophyll, carotenoids, and other plant pigments concentrated in the seed. The intense flavor combines pyrazine and other thermal degradation products developed during the traditional roast-and-press process.
