Cold-pressed oil from hulled pumpkin seeds (Cucurbita pepo, principally the Styrian and hull-less varieties), naturally rich in linoleic and oleic acids with significant levels of phytosterols, tocopherols, and trace zinc.
Dark green to reddish-amber liquid with a strong, characteristic nutty roasted flavor. Approximately 80% unsaturated fatty acids and one of the highest natural phytosterol concentrations among edible seed oils.

Introduction
Pumpkin seed oil has been pressed and consumed in the Styrian region (modern Austria, Slovenia, and parts of Hungary) since the 18th century, where it carries Protected Designation of Origin status under EU regulations.
Modern production uses hull-less or hulled pumpkin seeds (Cucurbita pepo subsp. pepo var. styriaca), which are roasted at 100 °C to 130 °C to develop flavor (for premium Styrian-style oil) or cold-pressed at lower temperatures (for milder, lighter oil). The roasted oil is the traditional and most commercially valuable form, characterized by its near-opaque dark green to red color and intense nutty flavor.
Regulated as a conventional edible oil by the U.S. FDA, EFSA, and Chinese food authorities. No Acceptable Daily Intake applies. Listed in multiple European pharmacopoeias as a supplement ingredient for urological applications.
The fatty acid profile is dominated by linoleic acid (45% to 60%) and oleic acid (20% to 35%), with palmitic and stearic acids making up most of the saturated fraction. Phytosterols, principally beta-sitosterol and delta-7-sterols, occur at 500 to 2,000 mg per 100 g, the highest level among common commercial edible oils.
