01 — Overview

Description

Papaya Powder is a pale orange free-flowing powder produced from the pulp of ripe Carica papaya fruit, preserving the tropical sweetness, vitamin A and vitamin C content, and the native papain enzyme of the fresh fruit.

Production is by spray drying with a maltodextrin or gum arabic carrier, or by freeze drying for premium nutritional and enzyme-active grades. Freeze-dried papaya retains significantly higher papain activity, which is the main commercial differentiator from spray-dried product.

Beta-carotene (provitamin A) and lycopene give papaya its characteristic warm color and contribute antioxidant claims in functional food and supplement applications.

02 — Background

Introduction

Papaya is native to Central America and has been cultivated commercially across tropical regions since the colonial era. Today major producers include India, Brazil, Mexico, Indonesia, and southern China.

Powdered papaya is a relatively recent industrial product, dating from the mid-twentieth century alongside other spray-dried tropical fruit powders. The technology challenge is the same as for mango and pineapple: high-sugar, low-pH pulp requires a carrier polymer to atomize cleanly during spray drying without sticking to chamber walls.

Papain is the commercial signature of the fruit. It is a cysteine protease found at high concentration in unripe fruit and at lower levels in ripe fruit. Industrially extracted papain is sold as a separate enzyme product, but papain-containing papaya powder serves food and supplement applications where a whole-fruit ingredient is preferred over isolated enzyme.

The combination of papain digestive activity, vitamin A and C content, and a mild sweet flavor positions papaya powder for use across infant nutrition, supplements, and gentle-flavor tropical formulations.
