A naturally occurring dipeptide of beta-alanine and L-histidine, concentrated in skeletal muscle and brain tissue. Functions as an intracellular pH buffer, metal-ion chelator, and anti-glycation agent.

Introduction
Carnosine was first isolated by Russian biochemist Vladimir Gulevich in 1900 from Liebig's beef extract, predating the structural identification of any vitamin. It is present at concentrations of 20 to 30 millimolar in human type II muscle fibers.
The dipeptide is selectively hydrolyzed in plasma by carnosinase, so oral bioavailability of intact molecule is limited but the constituent amino acids reassemble in muscle tissue. Co-supplementation with beta-alanine is therefore an effective alternative pathway for raising muscle carnosine.
Anti-glycation activity is the basis for anti-aging positioning: carnosine reacts preferentially with reactive carbonyls, sparing protein lysine residues from glycation by glucose and methylglyoxal. This mechanism is well-documented in vitro and supports premium positioning in mature-skincare and longevity supplement lines.
Production by enzymatic coupling of free L-histidine with beta-alanine yields material of high optical purity and low heavy-metal content, suitable for both nutraceutical and pharmaceutical channels.
