Elderberry Juice Powder is a deep purple to red-violet free-flowing powder produced from the juice of European black elderberry (Sambucus nigra), naturally rich in anthocyanins, flavonoids, and vitamin C.
The fruit is one of the most concentrated natural sources of cyanidin-3-glucoside and cyanidin-3-sambubioside, which give the powder its intense color and underpin the strong immune-support positioning of elderberry ingredients in the supplement market.
Production is by spray drying of clarified juice with a maltodextrin or gum arabic carrier, with controlled inlet and outlet temperatures to preserve the heat-sensitive anthocyanin content. Anthocyanin-standardized grades are produced for premium functional applications.

Introduction
Elderberry has been used in European folk medicine for centuries for cold, flu, and respiratory support applications. The modern supplement market for elderberry has grown substantially since the early 2000s on the basis of clinical work showing anti-viral and immune-modulating activity for standardized elderberry extracts.
The two species relevant to commercial trade are Sambucus nigra (European black elder), which dominates the supplement market, and Sambucus canadensis (American elder), which is grown commercially in North America. European Sambucus nigra has the highest anthocyanin content and is the species specified in most clinical studies and pharmacopoeial monographs.
Industrial production starts with juice extraction from ripe berries (raw fruit is mildly toxic due to cyanogenic glycosides, which are destroyed by cooking and juicing). The juice is then concentrated and spray-dried with a carrier polymer.
Anthocyanin content is the principal quality marker. Premium grades are standardized to 5 percent, 10 percent, or 25 percent total anthocyanins. Vitamin C and flavonoids including quercetin and rutin contribute additional functional positioning.
