Description

A microencapsulated, spray-dried powder of virgin cold-pressed coconut oil (Cocos nucifera), with characteristic coconut aroma and a fatty acid profile dominated by lauric acid (C12:0) and other medium-chain saturated fatty acids.

White to pale cream free-flowing powder with mild natural coconut flavor. Oil load typically 50% to 70%. Carrier wall materials include sodium caseinate, modified starch, and dairy-free options for vegan formulations.

02 — Background

Introduction

Coconut oil is the traditional cooking fat of tropical Asia, the Pacific, and parts of Africa, and one of the largest internationally traded vegetable oils by volume. Virgin coconut oil (cold-pressed from fresh coconut meat rather than copra) retains characteristic flavor compounds and a higher tocopherol content than refined coconut oil.

Microencapsulation by spray drying converts the oil into a powder format that is solid and free-flowing at room temperature. The encapsulation matrix protects the oil from oxidation, allows incorporation into dry-blend products without specialized handling, and supports defined nutritional labeling on a per-portion basis.

The fatty acid profile is distinctive: approximately 50% lauric acid (C12:0), 18% myristic acid (C14:0), 8% caprylic and capric acids combined (C8 to C10), with smaller amounts of palmitic, oleic, and stearic acids. The medium-chain composition has driven significant commercial interest in coconut-based products positioned for ketogenic and energy applications, although strictly defined MCT (C8 and C10 only) requires fractionation rather than coming from coconut oil itself.

Regulatory status follows coconut oil, which is an approved food in all major markets. Carrier materials are themselves approved food ingredients. Vegan-positioned versions use plant-based carriers (tapioca starch, pea protein, or maltodextrin) in place of sodium caseinate.

The strategic value of the powder format lies in two areas: dry-blend formulation compatibility for nutrition powders and beverage mixes, and shelf-life extension. Liquid virgin coconut oil is sensitive to oxidation at the trace polyunsaturated fraction. The encapsulated form achieves shelf lives substantially longer than the liquid oil at room temperature.
