01 — Overview

Description

Cold-pressed gourmet oil from pistachio kernels, typically lightly roasted before pressing to develop the characteristic green color and intense pistachio flavor. A premium specialty culinary oil with very limited industrial production.

02 — Background

Introduction

Pistachios are native to Western Asia, with Iran historically the largest producer. California overtook Iran in the early 2010s following sustained acreage expansion, and Turkey remains a significant traditional producer. Together these three regions account for the great majority of global production.

Pistachio oil is a niche luxury product because the underlying nut is expensive and oil yields are modest. Commercial production is limited primarily to specialty oil mills in France, Italy, and California serving the gourmet and pastry channels.

The bright green color, derived from chlorophyll and the trace carotenoids of the kernel, is one of the oil's distinctive marketing features and supports use in dessert applications where the visual cue reinforces the flavor identity.

Aflatoxin is the principal food-safety consideration with pistachios as a category, and reputable oil supplies test each batch against regulatory limits (typically 4 micrograms per kg total aflatoxins in the EU).
