01 — Overview

Description

Inositol hexaphosphate (IP6), the principal phosphorus-storage compound of cereal grains and legumes. Supplied as a 40 to 50 percent aqueous solution and as the calcium-magnesium phytate solid for dry-blend applications.

Pale yellow to amber viscous liquid in solution form; off-white powder in salt form. Six phosphate groups give the molecule strong metal-chelating capacity across the full pH range.

02 — Background

Introduction

Phytic Acid is the major storage form of phosphorus and inositol in seeds, grains, and legumes, representing 1 to 5 percent of dry weight in rice bran, wheat bran, and corn germ. Industrial extraction recovers phytic acid from rice bran or corn-steep liquor through ion-exchange and precipitation, followed by purification and standardization.

The molecule consists of a myo-inositol ring with six phosphate ester groups, giving it twelve dissociable protons and exceptionally strong chelating capacity for polyvalent metal cations including iron, zinc, calcium, magnesium, copper, and aluminum. The same chelation that drives the antinutrient effect of dietary phytate is what makes the purified compound a powerful food-processing chelator.

Regulated in Japan and several Asian markets as a permitted food additive for the applications listed above. In the EU, phytic acid itself is not assigned an E-number, but selected phytate salts and related compounds are evaluated under JECFA frameworks. Customers should verify destination-market regulatory status before specifying phytic acid in finished products.

Mechanism in food applications is competitive chelation, similar to EDTA but with a different selectivity profile and a different regulatory and labeling positioning. In fresh-cut produce treatment, phytic acid chelates trace copper and iron at the cut surface, slowing polyphenol oxidase activity and the resulting enzymatic browning. In shrimp processing, the same chelation suppresses tyrosinase-mediated melanosis, providing a sulfite-free and phosphate-free alternative for clean-label seafood products.

Strategic positioning: Phytic Acid is the natural-source chelator of the food additives space. It is positioned as a plant-derived alternative to EDTA where clean-label and natural-source claims drive ingredient selection. The cost premium over EDTA is justified by formulation positioning rather than functional advantage in most applications.
