01 — Overview

Description

The crystalline form of Maltitol, distinct from Maltitol Powder by particle morphology and from Maltitol Syrup by physical state. Approximately 90 percent the sweetness of sucrose with about half the caloric value.

White crystalline powder. The crystalline format is preferred for direct-compression pharmaceutical tableting, premium chocolate manufacturing, and dry-blend tabletop formulations where crystal hardness and mouthfeel matter.

02 — Background

Introduction

This SKU represents the high-purity crystalline form of Maltitol, distinct from both the powder format and the syrup format covered by other catalog entries.

Production starts with high-maltose corn syrup obtained by enzymatic hydrolysis of corn starch. The maltose is catalytically hydrogenated to maltitol under controlled pressure and temperature, then purified through chromatographic polishing and finally crystallized at controlled supersaturation to yield uniform crystals.

Regulated as E965 in the EU, classified as Generally Recognized as Safe by the U.S. FDA, and approved by JECFA without a numerical Acceptable Daily Intake limit.

Caloric value is 2.1 kcal per gram. Glycemic index is approximately 35, between sucrose at 65 and erythritol at 0.

The crystalline format is the workhorse grade for sugar-free chocolate manufacturing globally, where it must temper cleanly, hold gloss in finished bars, and deliver the characteristic snap that distinguishes premium chocolate from confectionery. No other polyol matches Maltitol's combination of sweetness, mouthfeel, and tempering compatibility at price points compatible with mass-market sugar-free chocolate.
