Whey Protein Concentrate 80 (WPC 80) is a high-quality milk-derived protein produced by ultrafiltration of sweet whey from cheese manufacturing, delivering 80 percent protein on a dry basis with intact native bioactive fractions.
The protein content is the defining commercial parameter at 80 percent (Kjeldahl, N x 6.38), with the balance consisting of approximately 4 to 8 percent lactose, 4 to 8 percent milk fat, and minimal ash. Light cream to off-white free-flowing powder with a clean dairy flavor profile.
The amino acid profile is exceptional: WPC 80 carries a PDCAAS of 1.0, a high BCAA content of approximately 22 percent, and 11 to 12 percent leucine on a protein basis, making it the reference protein for muscle protein synthesis applications.

Introduction
Sweet whey is the liquid by-product of rennet-coagulated cheese manufacturing, principally from Cheddar, Mozzarella, and similar varieties. Historically discarded or sold as low-value animal feed, whey is now the foundation of one of the most strategically important protein supply chains in modern food.
Industrial production of WPC 80 begins with pasteurized sweet whey clarified to remove residual fines. The whey is concentrated by ultrafiltration with molecular-weight cut-offs in the 5 to 20 kDa range, selectively retaining protein while permeating lactose, minerals, and water. Diafiltration further refines the protein-to-solids ratio to reach the 80 percent target. The concentrate is then evaporated, spray-dried, and optionally instantized with soy or sunflower lecithin.
Recognized as a permitted food ingredient by the U.S. FDA under GRAS provisions for milk-derived proteins, regulated under EU dairy ingredient frameworks, and approved by Codex Alimentarius for whey protein products in standardized compositions.
The amino acid quality positioning of whey is unique: a complete protein with the highest leucine content of any commercial protein, a rapid absorption profile (peak plasma amino acids at 60 to 90 minutes), and the presence of native bioactive fractions including alpha-lactalbumin, beta-lactoglobulin, immunoglobulins, lactoferrin, and glycomacropeptide.
