01 — Overview

Description

Acidic sodium aluminium phosphate with the approximate composition NaAl3H14(PO4)8·4H2O. A heat-activated leavening acid: minimal reaction at room temperature, complete reaction in the oven.

White, free-flowing crystalline powder. Practically insoluble in cold water, which provides exceptional dough stability at the mixing stage; reaction with sodium bicarbonate proceeds during the baking cycle as temperature rises.

02 — Background

Introduction

Sodium Aluminium Phosphate was developed during the 1950s and 1960s as a heat-stable leavening acid for industrial baking, where long batter and dough holding times made traditional fast-acting acids unworkable. Its commercial dominance in prepared cake mix and refrigerated dough has continued for six decades.

Production is by reaction of phosphoric acid with sodium hydroxide and aluminium hydroxide under controlled stoichiometry, followed by crystallization and milling. The dominant commercial form is the tetrahydrate; anhydrous SALP is used where moisture sensitivity dictates.

Regulated in the EU as E541, classified as Generally Recognized as Safe by the U.S. FDA under 21 CFR 182.1781, and approved by JECFA within the aluminium-containing additives group ADI framework. Note that aluminium-containing additives have been subject to ADI re-evaluation in the EU and several other jurisdictions; some bakeries reformulate to aluminium-free systems based on retailer or label requirements.

Mechanism in finished products is temperature-controlled acid release. At room temperature, the salt is essentially inert with bicarbonate. As the dough or batter heats in the oven, hydrolysis releases acidic phosphate species that react with sodium bicarbonate to produce CO2 just as gluten or starch matrix is setting. This timing optimizes finished volume and crumb structure.

Strategic positioning: SALP is the industrial baking acid for long-hold and heat-activated applications. Customers seeking aluminium-free alternatives are typically pointed toward SAPP or encapsulated MCP systems; for customers without that constraint, SALP remains the cost-and-performance leader.
