A naturally occurring organosulfur compound and the oxidised metabolite of dimethyl sulfoxide (DMSO). MSM delivers bioavailable sulfur for cysteine, methionine, glutathione, and connective-tissue sulfation pathways.
White to colourless crystalline powder, odourless to very faintly sulfurous, with a slightly bitter taste. Highly water-soluble. Heat-stable through standard tabletting and beverage-processing temperatures, with a melting point near 109 °C.

MSM is a natural compound present in trace amounts in many fresh foods, including milk, fruit, vegetables, and tea, although content degrades substantially during processing and storage. The molecule was developed as a commercial supplement ingredient in the 1980s after veterinary work on DMSO indicated that the oxidised MSM metabolite delivered comparable benefits with substantially better tolerability and odour profile.
Industrial production proceeds by oxidation of dimethyl sulfide or DMSO with hydrogen peroxide, followed by either crystallisation or four-stage distillation. The two finishing routes deliver chemically equivalent material but differ on residual-solvent profile and trace-impurity content, with distilled grades commanding a price premium in the US premium-supplement channel.
Recognised as Generally Recognized as Safe by the U.S. FDA (Self-Affirmed GRAS, with several GRAS notices accepted by the agency without objection), approved as a food and supplement ingredient by EFSA, and approved as a Health Food monograph ingredient in China. Australia, Japan, and Korea recognise MSM under their respective supplement frameworks.
The principal commercial value proposition is delivery of bioavailable sulfur to support the body's sulfation pathways: cysteine and methionine biosynthesis, glutathione regeneration, and sulfation of glycosaminoglycans in cartilage and connective tissue.
