Introduction
Matcha originated in China during the Song dynasty and was transported to Japan where it became the foundation of the tea ceremony tradition. The shade-grown, stone-milled green tea has been central to Japanese tea culture for over 800 years.
The shading process applied 20 to 30 days before harvest increases chlorophyll, theanine, and caffeine content while reducing catechin levels, producing the characteristic vivid green color and umami-sweet flavor that distinguish matcha from other green teas.
The traditional stone milling produces an ultra-fine powder with particle size below 20 micrometers, enabling the powder to suspend in water rather than settle, and producing the smooth mouthfeel essential to matcha beverages.
