Introduction
Flax is one of the oldest cultivated crops, with both fiber (linen) and seed (linseed) traditions extending back over 5,000 years. The seed produces an oil with the highest alpha-linolenic acid content of any commercial oil at 50 to 60 percent.
The high polyunsaturated content drives both the nutritional value as a plant-based omega-3 source and the oxidation challenges that require cold storage and light protection. Food-grade linseed oil must be distinguished carefully from industrial grade, which often contains lead or other drier compounds incompatible with food use.
Canada is the largest producer of food-grade flax, followed by China and Russia. Heilongjiang and Inner Mongolia are the main Chinese growing regions.
The oil is heat-unstable and should not be cooked. Conversion of plant alpha-linolenic acid to long-chain EPA and DHA in the human body is limited (typically 5 to 10 percent), which is the principal nutritional limitation versus fish-derived omega-3 sources.
