01 — Overview

Description

A five-carbon aldopentose and one of the few naturally occurring L-sugars. Approximately half the sweetness of sucrose with a clean profile and no aftertaste. The functional value extends well beyond sweetness: L-Arabinose is a non-competitive inhibitor of intestinal sucrase, which suppresses the post-prandial glucose spike when consumed with sucrose-containing foods.

White crystalline powder. Highly water-soluble, heat-stable, and compatible with most food and beverage matrices.

02 — Background

Introduction

L-Arabinose has been studied since the 19th century but only emerged as a functional food ingredient in the 2000s, when Japanese and Chinese research groups characterized its sucrase-inhibition activity and brought industrial-scale production online.

Commercial production proceeds from corn cob, sugar beet pulp, or other hemicellulose-rich agricultural residues. Hemicellulose is hydrolyzed with dilute acid or enzymes, the resulting arabinose-rich sugar stream is purified by chromatography, and L-Arabinose is crystallized and dried.

Approved as a Novel Food in China since 2008, classified as Generally Recognized as Safe by the U.S. FDA for food use, and recognized as a permitted food ingredient in Japan. The EU regulates it under the Novel Food framework.

The functional mechanism is what differentiates L-Arabinose from every other natural sweetener. At intake ratios of 3 to 4 percent relative to sucrose, L-Arabinose inhibits intestinal sucrase, the enzyme that cleaves dietary sucrose into absorbable glucose and fructose. The undigested sucrose passes to the colon, where it is fermented at a rate that produces neither a glycemic spike nor significant osmotic load. Clinical studies in Japan and China demonstrate post-prandial glucose reductions of 20 to 40 percent when sucrose is consumed with 3 to 4 percent L-Arabinose.

This places L-Arabinose in an unusual category. It is not a sweetener used to replace sucrose. It is an additive co-formulated with sucrose to convert ordinary sugar-sweetened food into a low-glycemic product without changing the taste, texture, or appearance of the finished good. Commercial use is most advanced in Japan and China, with growing adoption in Korean and Southeast Asian functional-food markets.
