01 — Overview

Description

A natural dark blue colorant produced by enzymatic conversion of geniposide extracted from gardenia fruit (Gardenia jasminoides), followed by reaction with primary amino acids to yield the blue chromophore. Produces a clean royal-blue to navy hue.

Dark blue to bluish-black free-flowing powder. Highly water-soluble. Notably more heat-stable, light-stable, and pH-tolerant than Spirulina Blue, with a broader application range across processed food categories.

Common market grades are sold by color value as E1% in absorbance units: E1% 100, 150, 200, 250, and 300. Higher color values reflect more concentrated pigment and lower carrier load.

02 — Background

Introduction

Gardenia has been used in East Asian traditional medicine and as a yellow dye for textiles and food for over a thousand years. The blue derivative was developed in Japan in the late twentieth century as part of a broader effort to expand the gardenia color portfolio beyond the traditional yellow.

Production starts with geniposide extracted from gardenia fruit. The iridoid glycoside is enzymatically hydrolyzed to genipin, which reacts with primary amino acids (typically glycine or taurine) to form the blue polymer chromophore. The reaction product is purified and spray-dried to defined color strength.

Gardenia Blue is not assigned a European E number and is not currently approved as a food color in the EU. It is widely approved in Japan, China, South Korea, and much of Southeast Asia as a natural colorant, and is used in specialty applications in other markets. Producers and exporters should verify the regulatory status in each destination market before shipment.

The technical profile is significantly stronger than Spirulina Blue: stable through baking, pasteurization, and short retort cycles, broad pH stability from 4 to 8, and good light stability in opaque or low-light packaging. This makes Gardenia Blue the preferred natural blue for thermally processed and longer-shelf-life applications in markets where it is approved.

Strategically, Gardenia Blue serves the Asian processed-food market as the dominant natural blue and is a candidate for international expansion as regulatory pathways open in additional markets.
