01 — Overview

Description

Spray-dried juice powders from apple, orange, strawberry, mixed berry, mango, and other fruits, retaining natural sugars, acids, color, and flavor in a free-flowing, shelf-stable powder format.

Free-flowing fine powder ranging in color from pale yellow to deep red depending on fruit source. Reconstitutes readily in cold and warm water with greater than 95 percent solubility, recovering the fruit's natural sweet-tart profile.

02 — Background

Introduction

Fruit Juice Powder is manufactured by concentrating fresh-pressed fruit juice through vacuum evaporation, blending with a food-grade carrier (most commonly maltodextrin DE 18 to 20), and spray-drying the mixture under controlled inlet and outlet temperatures.

The carrier is required because the natural sugar profile of juice, dominated by fructose and glucose, has glass transition temperatures too low to produce a free-flowing powder by spray-drying alone. Maltodextrin raises the effective Tg of the matrix and binds the volatile flavor and color components against degradation.

Resulting powder retains the natural sugars (typically 60 to 75 percent on a finished-powder basis), organic acids, water-soluble color pigments including anthocyanins and carotenoids, and a measurable fraction of heat-stable flavor compounds. Heat-sensitive aroma volatiles are partially lost in processing, which is why most premium formulations re-add a fraction of natural flavor extract after spray-drying.

Labeling treatment differs across markets: in the U.S., powder produced from concentrate may be declared as juice on reconstitution at the labeled Brix; in the EU, the maltodextrin carrier must be declared in the ingredients list whenever it exceeds the technical minimum.
