Introduction
Eucheuma denticulatum, commercially known as Eucheuma spinosum, is the second-most important commercially cultivated carrageenan seaweed after Kappaphycus alvarezii. It produces predominantly iota-type carrageenan, which forms elastic, thermo-reversible gels with calcium ions.
The cultivation footprint overlaps with cottonii but is smaller in absolute volume, reflecting the more specialized iota market versus the dominant kappa market. Cultivation areas are concentrated in Indonesia, the Philippines, and the East African coast.
Iota carrageenan's elastic gel character is preferred in dairy desserts, yogurt stabilization, and milk-protein systems where a soft, freeze-thaw-stable gel is required. Kappa carrageenan's firmer gel is preferred for meat, pet food, and confectionery.
