01 — Overview

Description

Carrot (Daucus carota) processed into a fine powder by spray-drying of carrot juice or air-drying of whole carrot slices, providing concentrated color, flavor, and beta-carotene in shelf-stable form.

Bright orange free-flowing powder with characteristic sweet-vegetable aroma. The intense color comes from beta-carotene, which is also the precursor to vitamin A in human nutrition.

02 — Background

Introduction

Carrot is among the most cultivated root vegetables globally, with substantial production in China, Russia, the United States, and across the European Union.

The orange color of modern carrots is a relatively recent development, with Dutch growers in the 17th century selecting for orange varieties from earlier purple and yellow types. The selection was based on the carotenoid pigments now valued for color, flavor, and provitamin A activity.

Beta-carotene is the dominant carotenoid in orange carrots and is converted in the body to retinol. The fat-soluble pigment is best absorbed in the presence of dietary fat, which is why carrot is traditionally cooked with oil or butter in many culinary traditions.

Carrot powder serves both as a natural colorant for orange and yellow applications and as a functional ingredient providing vitamin A precursor and modest dietary fiber in finished products.
