Introduction
Blueberry is native to North America and was domesticated as a commercial fruit crop in the early twentieth century. The fruit has become one of the most recognized superfruit categories globally and supports an extensive nutritional and clinical research program.
Industrial production proceeds by hot-water or hydroalcoholic extraction of fresh or dried blueberry fruit, followed by concentration, optional purification, and spray-drying with carrier to defined anthocyanin content.
Recognized as a permitted food ingredient by the U.S. FDA, the European Food Safety Authority, and equivalent regulators. Anthocyanins are additionally regulated as a natural food colorant (E163 in the EU).
Clinical evidence is most developed for cognitive function in older adults and for postprandial glucose response, with mechanistic interest in the anthocyanin metabolites that cross the blood-brain barrier. The compound class shares mechanistic pathways with bilberry anthocyanins at typically lower concentration but with much greater consumer recognition.
Strategic positioning combines cognitive-support dietary supplements (a fast-growing premium segment), superfruit functional beverages (the largest commercial application), and natural food coloring in regulated markets.
