01 — Overview

Description

The viscous, very dark byproduct of the third sucrose crystallization stage in cane-sugar refining. Contains 45 to 60 percent total sugars (a mixture of sucrose, glucose, and fructose), high mineral content, and a strongly bitter-sweet, robustly flavored profile.

Almost-black viscous liquid. The most concentrated form of cane molasses, with the highest mineral content (notably iron, calcium, potassium, and magnesium) and lowest sugar content of the commercial molasses grades.

British market refers to food-grade blackstrap as Black Treacle.

02 — Background

Introduction

Blackstrap Molasses is produced as the final byproduct of cane-sugar refining. After three successive boilings and centrifugations of cane juice extract progressively more sucrose as crystalline sugar, the remaining mother liquor is too low in sucrose for further commercial crystallization. This residue, blackstrap, contains 45 to 60 percent total sugars trapped in a complex matrix of cane minerals, organic acids, and Maillard reaction products developed through repeated boiling.

The product is characterized by very high mineral content relative to other sugar derivatives: typically 5 to 10 percent ash on a dry basis, with iron, calcium, potassium, and magnesium as the principal mineral components. The bitter-sweet flavor reflects both the concentrated molasses character and the buildup of Maillard products and caramelization compounds through multiple cooking cycles.

Recognized as a permitted food ingredient by the U.S. FDA, the European Food Safety Authority, and equivalent regulatory bodies. No Acceptable Daily Intake is assigned.

Caloric value is 2.9 kcal per gram, lower than other sugar derivatives because of the reduced sugar content and absence of starch or fat. Glycemic index of approximately 55, somewhat lower than refined sucrose.

The commercial role spans three distinct markets: food applications where the deep flavor and mineral profile are valued, industrial fermentation where the residual sugar supports yeast and bacterial cultivation, and animal nutrition where the combination of palatable sweetness and mineral content provides a low-cost feed enhancer. The food-grade product is sold in the British market as Black Treacle and remains a traditional ingredient in seasonal baking and confectionery.
