01 — Overview

Description

Banana Powder is a fine, free-flowing powder produced from ripe yellow Cavendish bananas, capturing the fruit's natural sweetness, creamy mouthfeel, and characteristic aroma in a shelf-stable format.

The fruit is peeled, pulped, and converted to powder by spray drying with a maltodextrin carrier, drum drying, or freeze drying. Spray-dried product is highly soluble and used as a flavor and bulking agent; freeze-dried product retains the highest level of native nutrients and aromatic volatiles and is preferred for premium and clean-label applications. Color ranges from pale yellow to light beige depending on ripeness at harvest and drying method.

Naturally rich in potassium, vitamin B6, magnesium, dietary fiber, and resistant starch (in green-banana variants), with native sugars accounting for 50 to 70 percent of dry weight in ripe-banana powders.

02 — Background

Introduction

The banana is among the most widely consumed fruits in the world, and powdered banana has been produced commercially since the early twentieth century, originally as a shelf-stable infant food.

Modern industrial production uses three drying technologies. Spray drying with a maltodextrin or gum arabic carrier delivers high solubility and free-flowing handling at the lowest cost. Drum drying produces a flake or coarse powder with caramelized notes from the heated drum surface. Freeze drying, the most expensive method, sublimates ice from frozen banana puree under vacuum and preserves close to the full aromatic and nutrient profile of the fresh fruit.

Ripeness at harvest determines the sugar-to-starch ratio. Green-banana powder is processed from unripe fruit and is standardized for resistant starch content, which behaves as a prebiotic fiber and has driven recent growth in functional food applications. Yellow-banana powder is sweet and aromatic and dominates flavor and infant-food applications.

The native potassium content of approximately 1,400 mg per 100 g of dry powder makes Banana Powder a recognized electrolyte source in sports nutrition. Vitamin B6 levels support neurological and immune claims.
