01 — Overview

Description

Wintergreen Oil consists almost entirely of methyl salicylate, the characteristic aroma compound of Gaultheria procumbens and Betula lenta. Both natural-distilled and synthetic methyl salicylate are commercially available; the synthetic form is the dominant commercial supply and is chemically identical to the natural form.

Colorless to pale yellow mobile liquid with the unmistakable sweet, sharp wintergreen aroma familiar from root beer, mints, and topical balms. Slightly soluble in water; freely miscible with ethanol and most fixed oils. Methyl salicylate content typically exceeds 98 percent in food-grade material.

02 — Background

Introduction

Methyl salicylate was first isolated from Gaultheria procumbens (eastern teaberry, American wintergreen) by Auguste Cahours in 1843. Industrial synthesis from salicylic acid and methanol was developed in the late nineteenth century and now provides the majority of commercial supply.

Synthetic production proceeds by Fischer esterification of salicylic acid with methanol under acid catalysis, followed by purification by distillation. Natural-source material is produced by steam distillation of Gaultheria procumbens or Betula lenta foliage, with yields under 1 percent driving the substantial price premium of natural grade.

Regulated as Generally Recognized as Safe by the U.S. FDA at flavor-use concentrations (21 CFR 172.515), assigned FEMA GRAS number 2745, listed in USP and EP pharmacopoeias, and approved by JECFA as a flavoring agent. Topical pharmaceutical use is regulated separately at much higher concentrations.

The molecule is the only major flavor compound responsible for wintergreen character; no blend of other esters or aromatics reproduces the profile.

Strategic positioning serves a narrow but defended flavor category: heritage American beverages, mint and root beer confectionery, and oral care, plus pharmaceutical and topical analgesic applications outside food.
