01 — Overview

Description

Peppermint Oil is a food-grade steam-distilled essential oil produced from the fresh or partially dried aerial parts of Mentha piperita. The oil carries the sharp, cooling, menthol-forward aroma that defines mint flavor across confectionery, oral care, and beverage categories.

Pale yellow to greenish-yellow mobile liquid with a characteristic intense minty odor. Freely miscible with ethanol and most fixed oils, sparingly soluble in water. Menthol content typically ranges from 38 to 48 percent in standard food-grade material, with menthone the second principal constituent.

02 — Background

Introduction

Mentha piperita is a natural hybrid of Mentha aquatica and Mentha spicata, cultivated commercially in the United States, India, China, and parts of Europe. The crop is harvested at peak essential oil content during early flowering and processed within hours to preserve volatile profile.

Production proceeds by steam distillation of the freshly cut herb. The resulting crude oil is rectified by vacuum fractionation to remove off-notes and adjust menthol-to-menthone ratio for the target food-grade specification.

Regulated as Generally Recognized as Safe by the U.S. FDA (21 CFR 182.20), assigned FEMA GRAS number 2848, and approved by JECFA as a flavoring agent. The European Food Safety Authority recognizes peppermint oil for flavor use under FL number 02.013.

Principal aroma compounds are menthol (38 to 48 percent), menthone (20 to 32 percent), menthyl acetate (3 to 10 percent), 1,8-cineole, and isomenthone. The menthol-to-menthone ratio is the primary quality marker, with higher menthol indicating mature harvest and cleaner cooling sensation.
