The minimal processing preserves a characteristic polyphenol profile with high EGCG and methylxanthine content alongside lower oxidation products than green tea.

White tea is produced from young Camellia sinensis leaf buds and adjacent leaves, dried with minimal processing (no fermentation, no pan-firing). The resulting tea is among the highest in EGCG and total catechins among commercial tea types and retains a distinctive flavor profile.
Industrial production of the extract proceeds by hot-water extraction of dried white tea, followed by concentration, decaffeination (optional), and spray-drying. Premium grades use selected single-origin material from Fujian and other premium tea-producing regions.
