Cream to off-white free-flowing powder with mild dairy aroma. Approximately 70 to 75 percent lactose, 11 to 14 percent protein, and the balance minerals and minor components.

The lactose-dominant composition makes sweet whey powder a cost-effective replacement for skim milk powder in many bakery and confectionery applications, although the lower protein content requires recipe adjustment in formulations where protein contribution is important.
