01 — Overview

Description

Spray-dried acid whey produced from the liquid byproduct of acid-coagulated dairy manufacturing including yogurt, cottage cheese, and quark, with characteristic lower pH and higher mineral content than sweet whey.

Cream to off-white free-flowing powder with mild tangy dairy aroma. Lower pH than sweet whey (3.8 to 4.6 versus 6.0 to 6.6) and higher mineral content due to the acid-driven release of calcium and phosphorus from casein.

02 — Background

Introduction

Acid whey is the byproduct of dairy products that use acid rather than rennet to coagulate milk casein, including yogurt, cottage cheese, cream cheese, and quark.

The growth of the Greek yogurt category through the 2010s produced a substantial increase in acid whey volume, as Greek-style yogurt production separates more whey than conventional yogurt. The resulting acid whey supply has driven commercial development of acid whey applications.

The lower pH of acid whey limits some applications where sweet whey would work well, but enables others, particularly those where natural acidity is beneficial. The higher mineral content from calcium and phosphorus release during acid coagulation also produces functional differences from sweet whey.

Industrial fermentation has emerged as a major non-food application for acid whey, where the lactose serves as a fermentation feedstock for ethanol, lactic acid, and other industrial bioproducts.
