Introduction
Punicalagin is among the largest molecular-weight polyphenols found in any common food, with the molecule consisting of a glucose core esterified with gallic and ellagic acid residues. The compound is the principal source of the astringent taste in Pomegranate juice.
Industrial production proceeds by selective ethanol or hydroalcoholic extraction of Pomegranate peels, followed by chromatographic purification specifically targeting punicalagin enrichment.
The compound is hydrolyzed in the gastrointestinal tract to ellagic acid, which is then converted by colonic microbiota to urolithins A and B. These urolithin metabolites are the principal bioactive forms reaching peripheral tissues and account for most of the observed biological activity in human cells.
