Pineapple Powder is a pale yellow to light gold free-flowing powder produced from ripe pineapple juice or pulp, capturing the characteristic tropical-tart flavor along with vitamin C, manganese, and bromelain content.
Spray drying with a maltodextrin carrier produces a highly soluble powder ideal for beverage and dairy applications. Freeze drying preserves a higher level of bromelain, the proteolytic enzyme used in meat tenderizing and digestive supplements, and is used for premium nutritional and clean-label products.
Native acidity (pH approximately 3.5 in solution) supports flavor brightness in beverage applications and helps prevent microbial spoilage in finished products.

Introduction
Pineapple originates from South America and was distributed worldwide during the colonial era, with major commercial cultivation today in the Philippines, Costa Rica, Thailand, Brazil, and China's Hainan and Guangdong provinces.
Powdered pineapple developed alongside the canning industry in the early twentieth century as a way to use surplus juice. Modern production is dominated by spray drying with a starch-derived carrier, which converts the high-sugar, high-moisture pulp into a stable powder while protecting the heat-sensitive flavor and enzyme content.
Bromelain is the commercial signature of pineapple. It is a cysteine protease used in meat tenderizing, baking dough relaxation, brewing chillproofing, and digestive enzyme supplements. The compound is partially destroyed by spray-drying temperatures, so freeze drying or low-temperature spray drying is required when retained enzymatic activity is part of the value proposition.
