Non-Fat Dry Milk is the U.S. regulatory designation for what is internationally known as skim milk powder, with specific compositional and grading standards established under USDA regulation.
The Grade A designation indicates compliance with the U.S. Pasteurized Milk Ordinance and stricter microbiological and quality standards than the basic Extra Grade designation. Grade A NFDM is required for fluid milk reconstitution and many manufactured food applications.
Heat treatment classification follows the same low, medium, and high heat system as international skim milk powder, with each class suited to different applications based on the resulting whey protein denaturation profile.
The product is functionally equivalent to international skim milk powder but is preferred for U.S. market manufacturing where regulatory documentation references NFDM rather than the international SMP designation.
