Introduction
Xanthan gum is an exopolysaccharide produced by fermentation of Xanthomonas campestris on glucose, sucrose, or molasses substrate. Standard xanthan forms highly viscous, pseudo-plastic solutions but contributes haze that limits use in clear applications.
Low-viscosity, clarified grades are produced by enzymatic or controlled-acid treatment of standard xanthan to reduce molecular weight and remove or fragment the cellular debris that contributes to haze. The result is a material that retains xanthan's characteristic pseudo-plasticity and salt tolerance while delivering clarity suitable for beverage and clear-gel applications.
Regulatory status follows standard xanthan: E415 in the EU, GRAS in the U.S., and no numerical Acceptable Daily Intake specified by JECFA.
The clarified grade represents a small but growing fraction of total xanthan production, driven by demand for clean-label suspension agents in functional waters, electrolyte drinks, and clear functional beverages.
