Milk Protein Concentrate (MPC) is a high-protein dairy ingredient produced by ultrafiltration of skim milk, retaining the full native ratio of casein to whey protein at approximately 80:20, delivering 80 percent protein on a dry basis.
Protein content of 80 percent (Kjeldahl, N x 6.38) is the defining commercial grade, with the balance being residual lactose, milk minerals, and minimal fat. Light cream to off-white free-flowing powder with mild dairy flavor.
The amino acid profile is complete with PDCAAS 1.0, and the native 80:20 casein-to-whey ratio delivers a balanced fast-and-slow absorption kinetic profile that mirrors the protein composition of bovine milk itself.

Introduction
Milk Protein Concentrate emerged in the 1990s as ultrafiltration membrane technology matured to handle skim milk directly without prior protein fractionation. The category grew rapidly in the 2000s as formulators sought a single ingredient that delivered both casein and whey in their native milk ratio.
Manufacturing begins with pasteurized skim milk. The milk is concentrated by ultrafiltration with diafiltration to selectively remove lactose, soluble minerals, and water while retaining all protein fractions. The retentate is then evaporated and spray-dried, optionally instantized.
Recognized as a permitted food ingredient by the U.S. FDA, regulated under EU dairy ingredient frameworks, and approved by Codex Alimentarius for milk protein products.
Amino acid quality positioning is identical to native milk: complete protein, balanced casein-whey ratio, and the full complement of native bioactive milk peptides.
