Micellar Casein is native, undenatured casein recovered from skim milk by microfiltration without the acid or rennet precipitation steps used for caseinates. The micellar structure is preserved, delivering the slowest-digesting commercial milk protein with minimum 85 percent protein on a dry basis.

Manufacturing begins with pasteurized skim milk. The milk is microfiltered at low temperature with membranes that retain the casein micelles (typically 0.1 micrometer) while permeating the smaller whey proteins, lactose, and soluble minerals. The casein retentate is diafiltered to remove residual lactose and minerals, then evaporated and spray-dried under conditions that preserve the micellar structure.
