Protein content of 90 percent minimum (Kjeldahl, N x 5.55 for collagen) defines the commercial grade. Light yellow to off-white free-flowing powder with neutral to mild characteristic flavor depending on grade. Average molecular weight is the second key specification, with finer hydrolysates at 2,000 Da reserved for premium beauty and clinical applications.

The amino acid profile is dominated by glycine, proline, and hydroxyproline, the signature collagen triad.
