01 — Overview

Description

The diester of glycerol with two acetic acid molecules, used as a flavor and fragrance solvent, food-grade plasticizer, and humectant in confectionery and tobacco applications.

Clear, almost colorless oily liquid. Mild characteristic odor. Miscible with water at limited concentration, fully miscible with ethanol, ethyl acetate, and most polar organic solvents.

02 — Background

Introduction

Glycerol diacetate is the partially esterified intermediate between monoacetin (glycerol monoacetate) and triacetin (glycerol triacetate). All three glycerol acetates are produced by esterification of glycerol with acetic acid or acetic anhydride.

Production is by direct esterification of glycerol with acetic acid under acid catalysis, with stoichiometry controlled to favor the diester. The product is then neutralized, dried, and distilled to remove residual glycerol, monoacetin, and triacetin.

Regulated as E1517 in the EU, recognized as Generally Recognized as Safe by the U.S. FDA, and approved by JECFA without a numerical Acceptable Daily Intake limit when used in defined applications.

Among the three glycerol acetates, the diester is the least widely traded but holds a defined niche in flavor and fragrance carrier applications where its specific polarity and viscosity profile suit the dissolution and dispensing requirements of compounded flavor systems.
