Introduction
Blueberries have become one of the most prominent functional fruits in the global food industry, driven by research interest in anthocyanin pigments and their role in cardiovascular and cognitive health markers.
Freeze-drying preserves the full anthocyanin profile of fresh blueberries far better than conventional hot-air drying, which degrades these heat-sensitive pigments through oxidation and caramelization. Lyophilized blueberries retain 90 percent or more of original anthocyanin content.
Wild blueberries (Vaccinium angustifolium), grown in cool temperate regions, contain higher anthocyanin levels and a more intense flavor profile than the larger cultivated highbush varieties (V. corymbosum). Both varieties are commercially available in freeze-dried form.
The fruit is the inclusion of choice for premium positioning in cereals, bars, and functional foods because the dry whole-berry format preserves the visual impact and bursting fresh-fruit flavor that lower-cost dehydrated alternatives cannot match.
