Sweet Fennel Oil is a food-grade essential oil obtained by steam distillation of the dried ripe fruits (seeds) of Foeniculum vulgare var. dulce. The oil delivers a sweet, licorice-like, slightly camphoraceous aroma related to but distinct from anise and star anise, used in Mediterranean cuisine, herbal liqueurs, and digestive product formulations.
Colorless to pale yellow mobile liquid with a sweet, anise-like, herbaceous aroma. Miscible with ethanol and fixed oils; sparingly soluble in water. trans-Anethole typically constitutes 60 to 80 percent of the oil, with fenchone the second principal compound at 1 to 15 percent providing the characteristic fennel character versus pure anise.

Introduction
Foeniculum vulgare is cultivated commercially in Egypt, India, China, Bulgaria, and parts of the Mediterranean. Egyptian and Indian production dominate the global fennel oil market, with India leading sweet fennel supply for food-grade applications.
Production proceeds by steam distillation of crushed dried fruit, yielding approximately 2 to 6 percent essential oil. The choice between sweet and bitter fennel varieties is set at cultivation, with var. dulce producing the lower-fenchone, sweeter oil preferred for food and beverage applications.
Regulated as Generally Recognized as Safe by the U.S. FDA (21 CFR 182.20), assigned FEMA GRAS number 2483, listed in EP pharmacopoeia, and approved by JECFA as a flavoring agent.
Principal aroma compounds in sweet fennel oil are trans-anethole (60 to 80 percent), fenchone (1 to 15 percent), estragole (3 to 10 percent), limonene (3 to 10 percent), and alpha-pinene. Fenchone content distinguishes fennel from anise and star anise sensorially, contributing the characteristic camphor-edged sweetness.
