01 — Overview

Description

The glycerol ester of wood rosin, used as a density-adjusting agent (weighting agent) in citrus-flavored beverage emulsions. Increases the specific gravity of essential oil droplets to match the surrounding aqueous phase, preventing creaming and ringing in clear-bottle beverages.

Pale yellow to amber transparent solid resin, supplied as broken glass or fine flakes. Insoluble in water; soluble in essential oils and the citrus-oil systems used in beverage emulsion manufacturing.

02 — Background

Introduction

Ester Gum is the glycerol ester of wood rosin, produced by esterification of refined gum rosin (the resin extracted from pine trees) with glycerol under acid catalysis. The compound has been used as a beverage emulsion weighting agent since the early 20th century.

Industrial production starts from chemically refined wood rosin, which is esterified with food-grade glycerol at controlled temperature and pressure, then purified by steam distillation and filtration. The high-density resin is then dissolved in citrus oils for beverage emulsion preparation.

Regulated as E445 in the EU, classified as Generally Recognized as Safe by the U.S. FDA for specific beverage applications, and approved by JECFA with an Acceptable Daily Intake of 25 mg per kg body weight.

The molecule's value proposition is density: pure citrus oil has specific gravity around 0.85, while water is 1.00. Without weighting, oil droplets in beverage emulsions float to the surface as a visible ring. Ester Gum at 100 to 130 percent of citrus oil weight raises the oil-phase density to match the aqueous phase, preventing visible separation.

Strategic positioning in cloudy citrus beverages remains substantial in many markets, though SAIB and tropical fats have gained share in others. The U.S. and EU markets continue to permit Ester Gum; some Asian and Latin American markets have shifted toward alternative weighting agents driven by regulatory and clean-label considerations.
