Description

Coconut milk (Cocos nucifera) processed into a fine powder by spray-drying with milk protein or vegetable protein carriers, preserving the rich coconut flavor and creamy mouthfeel of fresh coconut milk.

White to off-white free-flowing powder with characteristic coconut aroma and concentrated sweet-fatty flavor. Reconstitutes with hot water to produce coconut milk or cream of varying richness depending on dilution.

Introduction

Coconut is one of the most versatile crops in tropical agriculture, with virtually every part of the plant used in food, fiber, fuel, or building applications.

Coconut milk powder is produced by spray-drying coconut milk together with a carrier system that stabilizes the high fat content during drying and storage. Common carriers include sodium caseinate (for dairy-tolerant markets) and vegetable proteins or maltodextrin (for vegan markets).

The high lauric acid content of coconut fat gives the product unique flavor and functional characteristics. Lauric acid is a medium-chain fatty acid metabolized differently from long-chain fats, which has supported positioning in ketogenic and functional food applications.
