01 — Overview

Description

Roasted carob pods (Ceratonia siliqua) ground into a fine powder that resembles cocoa in color and provides a sweet, slightly nutty flavor profile. Naturally caffeine-free and theobromine-free.

Reddish-brown to dark brown free-flowing powder with characteristic sweet, caramel-like aroma. Lower in fat than cocoa powder, naturally higher in natural sugars, and free of stimulant alkaloids.

02 — Background

Introduction

Carob has been cultivated in the Mediterranean basin for thousands of years, with the seeds historically used as the original gemstone weight standard, the carat.

The pods contain a natural sweet pulp that is roasted and ground to produce carob powder. The flavor is reminiscent of chocolate but distinctly different, with natural sweetness, mild caramel notes, and the absence of the bitterness associated with unsweetened cocoa.

The most significant compositional difference from cocoa is the absence of theobromine and caffeine, which makes carob safe for dogs and suitable for children's products targeting caffeine-free positioning.

Carob is also significantly lower in fat than cocoa, with most carob powders containing under 1 percent fat versus 10 to 22 percent in cocoa powders. This produces different functional behavior in bakery and confectionery applications and typically requires recipe adjustment when substituting carob for cocoa.
