Cream to off-white free-flowing powder with mild apple aroma. Highly soluble in hot water. Total dietary fiber typically above 85 percent on a dry basis.

Introduction
Pectin is a complex polysaccharide present in the cell walls of all higher plants and concentrated in apple pomace and citrus peel. Industrial pectin production from apple pomace was developed in Germany and Denmark in the early 20th century.
The galacturonic acid backbone of pectin is methyl-esterified to varying degrees, and the degree of esterification determines whether the pectin sets through the high-methoxyl mechanism requiring sugar and acid, or through low-methoxyl calcium-bridge gelation suitable for low-sugar products.
Apple pectin fiber as a dietary fiber category is distinct from apple pectin as a confectionery gelling agent: the fiber grade emphasizes the dietary-fiber claim and the documented cholesterol and glycemic effects of soluble pectin consumption.
Chinese pectin production has expanded substantially since 2010 and now supplies competitive volumes to global confectionery, dairy, and supplement markets, supplementing established European supply.
