Premium gum arabic exuded from the Acacia senegal tree, distinguished from the lower-cost Acacia seyal grade by superior emulsification and clarity. The preferred grade for beverage flavor emulsification and confectionery encapsulation.
Pale yellow to amber free-flowing powder or pre-hydrated granules. Cold-water soluble with low viscosity; one of the few hydrocolloids that can dissolve at very high concentration (above 40 percent) without forming gel.

Introduction
Gum arabic is the air-hardened exudate that flows from incisions in the bark of acacia trees, primarily Acacia senegal across the Sahel belt from Senegal to Sudan and into Chad. Sudan accounts for approximately half of global supply.
The molecule is a complex arabinogalactan-protein with a unique structure that enables it to function simultaneously as a thickener, emulsifier, and film former at very high concentration without forming gel. This profile is unmatched among food-grade hydrocolloids.
Premium senegal grade is distinguished from seyal grade by higher nitrogen (protein) content of 2.0 to 3.5 percent and by superior emulsion stability. The beverage flavor industry relies almost exclusively on senegal grade for cloud and emulsion applications.
Cultivation and harvest is a smallholder activity supporting livelihoods across the Sahel. Sustainability and fair-trade certification programs have expanded since 2010 in response to brand-owner demand.
