Description

Pumpkin (Cucurbita pepo and related species) processed into a fine powder by spray-drying or air-drying, used as a flavor, color, and nutritional ingredient in bakery, soup, and beverage applications.

Light orange to deep golden free-flowing powder with characteristic sweet-vegetable aroma reminiscent of cooked pumpkin. Provides natural carotenoid color and modest sweetness.

Introduction

Pumpkin is a culturally significant ingredient in North American cuisine, particularly around autumn and winter holidays. The pumpkin-spice flavor category has grown into a substantial year-round segment in beverages, bakery, and confectionery.

Pumpkin powder concentrates the carotenoids, fiber, and modest sweetness of fresh pumpkin into a shelf-stable dry ingredient, simplifying use in dry mixes and processed foods.

The beta-carotene content of pumpkin is high, comparable to carrot, and supports both color and provitamin A claims in finished products. Kabocha and butternut varieties tend to deliver higher carotenoid levels than standard field pumpkin.

Pumpkin powder also functions as a partial flour replacement in gluten-free bakery applications, providing color, moisture, and structural support while contributing recognizable pumpkin flavor and natural sweetness.
