Introduction
L-Aspartic Acid is a non-essential amino acid that the body produces from oxaloacetate through transamination. It is one of the two amino acid components of aspartame (the other being L-phenylalanine), which is the dominant commercial application.
Industrial production proceeds primarily by enzymatic synthesis from fumaric acid using aspartate ammonia lyase, yielding the natural L-enantiomer at high purity. Alternative routes from microbial fermentation are also commercial.
Recognized as a permitted food ingredient by the U.S. FDA, the European Food Safety Authority, and equivalent regulators worldwide. Listed in BP, USP, EP, and JP pharmacopoeias.
