01 — Overview

Description

Mango (Mangifera indica) processed into uniform cubes and freeze-dried to preserve color, flavor, and aromatic intensity of the fresh tropical fruit.

Bright golden-orange porous cubes with intense mango aroma. Sweetness is concentrated relative to fresh fruit through moisture removal, and the texture is crisp in dry applications and rehydrates rapidly in wet ones.

02 — Background

Introduction

Mango is the most consumed fruit globally by volume, with India, China, Thailand, and Mexico dominating world production. Freeze-drying enables long shelf-stable supply of premium mango outside the seasonal harvest window.

The carotenoid pigments that give mango its bright golden-orange color are reasonably stable through freeze-drying but can fade in subsequent storage if exposed to light and oxygen. Modern barrier packaging extends color shelf life substantially.

Mango is naturally high in vitamin C and provitamin A carotenoids, and freeze-drying preserves these heat-sensitive nutrients far better than alternative drying methods.

The high sugar content of ripe mango requires careful temperature control during the freezing step of lyophilization to avoid softening and structural collapse. Premium grades maintain crisp dice integrity with minimal stickiness even in humid environments.
